Blueberry Oatmeal Cookies

Is your sweet tooth acting up? Do you want to indulge without bearing the guilt of eating gastronomically sinful desserts? Then, you should try making this healthy version of blueberry oatmeal cookies.  This is guaranteed to be simply delectable minus the fat. So, here it goes.

Ingredients

Before getting started make sure you head to the store and grab the following ingredients if you do not have them already.

  • 1 cup instant (quick-cook) oats (correctly measured)
  • ¾ cup whole wheat flour (correctly measured)
  • 1 ½ tsp baking powder
  • ½ tsp ground cinnamon
  • 1/8 tsp salt
  • 2 tbsp coconut oil, melted
  • 1 egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup honey
  • ¼ cupdried blueberries

Directions

  1. Preheat oven to 325 degrees F (163 degrees C). Use parchment paper to line the baking sheets or Silpat.
  2. Whip all together in a medium-sized bowel the flour, oats, baking powder, cinnamon, and salt.
  3. Beat together the coconut oil, egg, and vanilla in a separate bowl. Pour and stir in the honey until thoroughly mixed.
  4. Add in the flour mixture, stir thoroughly. Fold in the blueberries. Chill the dough for 30 minutes.
  5. Spoon dough into 15 scoops lined on the baking sheet at about 2 inches apart.
  6. Bake at 325°F (163 degrees C) for 13-15 minutes until golden brown. Leave to cool on the baking sheet for at least 15 minutes, and then place to a wire rack.
